Ohh burgers, how I love thee.
We were planning on going camping this Memorial Day weekend with multiple families from our little town, Carrboro, North Carolina. However, mother nature had other ideas. Heavy rains and rising water levels at Kerr Lake forced all of our campsites to be closed. Huge bummer.
I had already bought and prepped our food for the weekend, including making Jalepeño Bacon Burgers that could be thrown on the campfire grill with ease.
We ended up hosting some of our fellow campers over for a cookout on Saturday night so we could all eat up the camp food we had prepared. I pulled out my jalepeño bacon burgers and caused some excitement with our guests.

Jalapeño Bacon Burgers with Grilled Onions, Arugula, and Cheddar
- 1 lb of organic, grass-fed ground beef
- 2 fresh jalapeños chopped finely, seeds and all
- 1/2 white onion chopped fine
- 1/2 package of nitrate-free, naturally cured bacon, diced into small pieces
- 1 egg
- salt and pepper
- 1/2 lb of sliced cheddar cheese
- 1 whole white onion, sliced into 5-6 rings for grilling
- 1 package whole wheat hamburger buns
- 2 cups arugula or spinach or any lettuce you have
- Condiments of your desire (we used organic mayo and ketchup)
Dice the 2 jalapeños, 1/2 white onion and 1/2 package of bacon and put into medium sized mixing bowl. Add package of ground beef, and the egg, salt, and pepper. Mix well with hands, making sure the bacon and other ingredients are incorporated well. Form the mixture into 6 patties.
I wrapped the patties individually with saran wrap and froze for camping, and then thawed them when we were ready to grill. You can just set them aside or put in the fridge if you aren’t ready to use them right away.
I love grilled vegetables in the summer time, so I chopped up all our veggies (peppers, zucchini, summer squash, onion) that needed to be eaten and tossed them in a little olive oil and sprinkled with salt and pepper. I grilled them for about 5 minutes on each side and then set them aside.
When you are ready to grill, pull out the burgers, fire up your grill to a high heat and throw those bad boys on. Grill for just a few minutes on one side and then flip. Add the cheese and let grill for another few minutes. Add the buttered buns to the grill now too. The buns and burgers should be done about the same time. You want a nice crispy edge to the buns.
I had some fresh arugula in my fridge, but you could also use any type of lettuce. I topped my burger with grilled onions, arugula, mayo, and ketchup. It was amazing!!!
